    When I need to fly, I always try to request a fruit plate or a vegan dish of some kind, or at least vegetarian, even though I am unlikely to eat most of it.

    This year I got lucky on my way to Europe with the fruit on a Lufthansa flight, and it made the trip more pleasant.

  • Scientists and Philosophers to Research Fruitarianism

    It has been seven years since I tried to find researches or philosophers who might be interested in fruitarianism. Back then I have joined ResearchGate.net but nobody seemed to be involved into anything close to fruitarian diet or ethics. I left this note on my profile (researchgate.net/profile/Lena_Nechet):

    Hi, I have joined this site for scientist (not being one myself) to find someone who is interested in researching nutritional aspect of fruitarianism. I hoped someone would be interested in a case study. I gave up, maybe too early.     I am not as eager anymore to offer my time for this purpose, but I will definitely consider serious offers.

  • Young People Feel Better Being Giveg Fresh Fruits

    A new study tested the psychological benefits of a two-week clinical intervention to increase fruit and vegetable consumption in 171 young adults (aged 18–25).

    Participants were randomly assigned into

    1. a diet-as-usual control condition,
    2. an ecological momentary intervention (EMI) condition involving text message reminders to increase their consumption plus a voucher to purchase fruits and vegetables,
    3. or a fruit and vegetable intervention (FVI) condition in which participants were given two additional daily servings of fresh fruits and vegetables to consume on top of their normal diet.

    Only participants in the last group (FVI) condition showed improvements to their psychological well-being with increases in vitality, flourishing, and motivation relative to the other groups. No changes were found for depressive symptoms, anxiety, or mood.

    Giving young adults fresh fruit and vegetables to eat can have psychological benefits even over a brief period of time.

    Since September 2016, I watched quite a few videos on a YouTube channel à-bas-le-ciel by Eisel Mazard. I started with his critique on Durianrider and Freelee the Banana Girl, but then switched somehow to his older videos on veganism, and liked many of them. Even though I disagree with many of his views and his style of argumentation, I find it is good to have a channel like this in the vegan online world.

  • Glycotoxins, Advanced Glycation, dAEG and Cooking

    Modern diets are largely heat-processed and as a result contain high levels of advanced glycation end products (AGEs), also known as glycotoxins. Dietary advanced glycation end products (dAGEs) are known to contribute to increased oxidant stress and inflammation, which are linked to the recent epidemics of diabetes and cardiovascular disease.

    Dry heat promotes new dAGE formation by 10-100 times above the uncooked state across food categories. Animal-derived foods that are high in fat and protein are generally rich in glycotoxins and prone to formation of new glycotoxins during cooking. Carbohydrate-rich foods such as vegetables, fruits, whole grains (but also milk) contain relatively few glycotoxins, even after cooking.

    The formation of new glycotoxins during cooking was: 

    • prevented by the AGE inhibitory compound aminoguanidine
    • and significantly reducedby
      • cooking with moist heat,
      • using shorter cooking times,
      • cooking at lower temperatures,
      • and by use of acidic ingredients (such as lemon juice or vinegar).

    Advanced glycation end products (AGEs), are a diverse group of highly oxidant compounds with pathogenic significance in diabetes and in several other chronic diseases. Glycotoxins are created through a Maillard or browning reaction - it is a part of normal metabolism, but if excessively high levels of glycotoxins are reached in tissues and the circulation they can become pathogenic, which is related to their ability to promote oxidative stress and inflammation by binding with cell surface receptors or cross-linking with body proteins, altering their structure and function.

    Glycotoxins also exist in foods: they are naturally present in uncooked animal-derived foods, and cooking results in the formation of new AGEs: grilling, broiling, roasting, searing,and frying propagate and accelerate new AGE formation. Recent studies clearly show that dAGEs are absorbed and contribute significantly to the body’s AGE pool.

    Avoidance of dAGEs, glycotoxins in food, helps delay chronic diseases and aging in animals and possibly in human beings.

    Glycotoxins in the diet represent pathogenic compounds that have been linked to the induction and progression of many chronic diseases. High temperature and low moisture consistently and strongly drive their formation in foods. Comparatively brief heating time, low temperatures, high moisture, and/or pre-exposure to an acidified environment are effective strategies to limit new formation in food.

    A significantly reduced intake of dAGEs can be achieved by reducing intake of solid fats, fatty meats, full-fat dairy products, and highly processed foods, and by increasing the consumption of legumes, vegetables, fruits, and whole grains. 

    Low-AGE–generating cooking methods are 

    • poaching,
    • steaming,
    • stewing, 
    • boiling.

    For example, the high AGE content of broiled chicken (5,828 kU/100 g) can be significantly reduced to 1,124 kU/100 g when the same piece of meat is either boiled or stewed. 

    Future studies should continue to investigate the health effects of AGEs and refine recommendations for safe dietary intakes. However, current data support the need for a paradigm shift that acknowledges that how we prepare and process food may be equally important as nutrient composition.

  • Seeds in Fruitarian Diet?

    Some fruitarians maintain that fruitarian diet should include only fruit flesh, which usually surrounds seeds of the common fruits. They insist on nver including seeds, because eating them would mean the same as destroying plants (or their "babies").

    I must disagree

    1. First, seeds are not developed organisms. The main premise of fruitarianism is that complex organisms as plants deserve our ethical consideration, and most seeds are just dormant plant matter: it would be highly impractical and even immoral to treat them as individuals. 
    2. Second, they are produced by plants in excess, not all require to go through our digestive system, and only few can develop into organisms due to shortage of resources on this planet.
    3. Third, fruitarianism is about fruits is botanical sense, not culinary or common.

A sharp distinction between humans and “animals” is essential if we are to bend them to our will, make them work for us, wear them, eat them–without any disquieting tinges of guilt or regret. It is unseemly of us, who often behave so unfeeling toward other animals, to contend that only humans can suffer. The behavior of other animals renders such pretensions specious. They are just too much like us.

Water

Water is an essential nutrient - it is required in amounts that exceed the body's ability to produce it. All biochemical reactions occur in water. It fills the spaces in and between cells and helps form structures of large molecules such as protein and glycogen. 

Most foods contain water. The body can usually get 20% of its total water requirements from solid foods alone. The human body can last weeks without food, but only days without water. 

The digestion process also produces water as a byproduct and can provide around 10 per cent of the body’s water requirements.  

Water is a transparent and nearly colorless chemical substance. Its chemical formula is H2O, meaning that its molecule contains one oxygen and two hydrogen atoms

Water covers 71% of the Earth's surface. It is vital for all known forms of life. On Earth, 97% of the planet's crust water is found in seas and oceans, 1.7% in groundwater, 1.7% in glaciers and the ice caps. Only 2.5% of this water is freshwater, and 98.8% of that water is in ice (excepting ice in clouds) and groundwater. Less than 0.3% of all freshwater is in rivers, lakes.

Safe drinking water is essential to humans and other lifeforms even though it provides no calories or organic nutrients. ~One billion people still lack access to safe water. It was estimated that by 2025 more than half of the world population will be facing water-based vulnerability, and by 2030 water demand in some developing regions of the world will exceed supply by 50%.

Approximately 70% of the freshwater used by humans goes to agriculture.
